Lemon Chia Cookie Dough

A twist on the classic lemon poppy seed, this Lemon Chia cookie dough has a refreshing flavor and chia seeds sprinkled throughout.  Sweetened with dates and organic coconut sugar and made with gluten-free and whole grain flours, these cookies make a perfect addition to your breakfast or are great as an afternoon pick me up. 

Vegan, soy free, and gluten-free.

Baking Instructions: Preheat your oven (or toaster oven!) to 350.  Form 1-1.5 inch balls of dough and press them slightly with your palm on a lined backing sheet.  Bake them in your oven for 8-10 minutes.  Let your cookies cool for a few minutes and enjoy!

Makes about 26 one inch cookies.
