Pumpkin Snickerdoodles

Serves: about 24 cookies

Time: 20-30 minutes

INGREDIENTS

1 tub (14 oz) Because Cookie Dough Vanilla Chai Cookie Dough

1/3 cup pumpkin puree

1 1/2 tsp pumpkin pie spice

1/3 cup coconut sugar

STEPS

Preheat oven to 350 and line a baking sheet with parchment paper.

In a bowl, mix pumpkin puree, Vanilla Chai Cookie Dough, and 1/2 tsp pumpkin pie spice.  

Freeze for 5-10 minutes.  Then roll into balls.

Mix coconut sugar and 1 tsp pumpkin pie spice in a small dish.  Roll the dough balls in the sugar mixture.

Place the balls on the parchment paper and flatten with your palm.  If you prefer crispier cookies, make them flatter (about 1/8-1/4 inch thick).  They do not spread much so flatten them to your preferred cookie thickness.

Bake for 12 minutes, let cool, and enjoy!
